Mom's Vegan Banana Cake

Many thanks to my mom, who sent me a recipe for this vegan banana chocolate chip cake, along with ingredients to make it. Hello long distance birthday cake!



The piece in the picture looks to me, inexplicably, like a quaintly shabby Willy-Wonka style cottage. Even though it appears a little wan and droopy, the whole cake rose well and stayed moist, rich and super tasty, its veganism unnoticeable. And now, I will retire quietly into a sugar coma for the evening.
